Cheddar Chive Drop Biscuits--quick, easy, and delicious!

Cheddar Chive Drop Biscuits

2 cups all-purpose flour or gluten-free baking mix

½ tsp. salt

1 Tbs. sugar

2 tsp. baking powder

2 Tbs. chopped fresh chives

½ cup vegetable shortening

1 cup milk

¼ cup shredded sharp cheddar

 

Preheat oven to 425 degrees. Stir dry ingredients together in a medium size bowl.  Cut in vegetable shortening using a pastry blender or two knives.  Add milk and stir until just blended.  Drop by tablespoons onto a lightly greased baking sheet.  Bake at 425 degrees for 12 to 15 minutes, or until lightly browned.  Cool slightly and serve warm.  Makes 12 biscuits.

 

Notes

--I’ve made these plenty of times at home in my familiar oven and at bread demos in a variety of kitchens, and they’ve always turned out great.

--You can substitute other fresh herbs like basil, rosemary or thyme.  If you’re using dried herbs, use only a tablespoon.

--My sister Lisa recommends brushing these with garlic butter just before serving, and I agree!
